Weekend Recap

Hello Foxy Friends! Today is a short week, I'm headed to Vegas with some fellow Blended Blog ladies for a blogger conference. I'm so stinkin' excited and nervous at the same time. I just hope and pray I'm not all awkward...

I had Friday off so I made a follow up doctor appointment for my ankle...more scar issue stuff, boo. But hopefully in the next few weeks it will be better. Fingers crossed. I picked up Mini Fox from my parents who had decided to have a tea party with every animal they own.


 Then I picked up Baby Fox from school and we met up with my sister and mom for lunch.


Baby Fox had his first Crepe...he liked them...so Deena when we come visit get out your crepe making pan :)


Mr. was still gone so after naps we took a quick bath and I took the kids to get a movie from the Red Box and pick up a few things from the grocery store. But first some posing in the chip isle.



The kids wanted to snuggle up and watch their Lego movie.


Baby Fox wanted to sing Mini Fox her night time hush little baby song.

 
Mr. got home safe and sound and the kids could not have been more excited...
 
Saturday
 
We went to what I would equate to the NFL draft...what you might ask it was? Yea the lottery for my trying to get my kid into school...crazy I tell ya. We didn't get in, but hey it's okay, we have other options...and bottom line eventually he's going to learn right? Seriously...this was the lottery drawing...
 
 
Then we hit up the mall to pick up the pre-sale Star Wars I bought a while ago. Of course the Disney Store had a cool presentation/interactive thing for the kids.
 

 
Mini Fox got her first lesson in wearing in your shoes...poor thing.
 
 
 These three watched some of the Star Wars movie and made popcorn while I was at the grocery store. Sneaky people.
 
 
Sunday while I was getting ready, these guys did some snuggling.
 
 
We headed to the flower fields and had the best time. We thought it was going to rain, but went anyway, and as soon as we got there the sun can out and it was gorgeous! Come back on Thursday to see the rest of the pictures for the Picture Perfect Project!
 
 
We got a really late lunch at In and Out and guess what? I actually got to eat the bun, and I didn't get sick! Woo hoo!
 
 

They were getting a little tired...

 
So we headed home for naps and then had dinner at my parents, which I forgot to take pictures of, oops! But we had a great weekend. I can't wait for you to see all of the flower field pictures!

 Since I didn't do a recap this week I figured I would do one now. It was a favorite since I last wrote about my favorites. Picture heavy so if you don't like cute adorable pictures of my kids just go ahead and skip to #3 :)
 
Friday we did a family trip to Costco to pick up some stuff and a pizza for dinner. Which I ate and didn't get sick, woo hoo! Seriously this girl...can se take a serious picture ever?
 
 
Saturday
 
Mini Fox and I headed to a Bridal shower, while the boys headed to the movies and Chuck E. Cheese.
 
She can smile normal!
 

Oh wait...there it is.
 


I was in charge of making the ribbon bouquet, I think it turned out pretty good.


So excited for this lovely lady.

 
After we got back, Mr. and I headed out to a movie (yep Mr. saw two movies in one day) and to dinner for our 11 year anniversary, I can't believe we've been married for 11 years! If you want to see our wedding video, click here.
 
But before we left I caught this cute moment of the kids dancing. It's blurry, but it's just so sweet.
 
 
We saw London Has Fallen, the sequel to  Olympus Has Fallen, we liked both movies. Action flicks that are someone unbelievable...but hey we go with it.
 
 
Sunday this girl earned her way to a purple scooter, she was over the mood excited, can you tell?
 

After church and naps we headed over to a Korean BBQ place for dinner with friends.


During the week, I got a couple of workouts it...oh and I just found out that our gym has free wifi...what?! I can now watch Netflix while running...you better believe I watched 2 episodes of Fuller House while running :) Well besides to take this photo, I was watching, hehe.


We got to facetime with this guy every night. What did we do before facetime? Seriously...so much better seeing a face with a voice.
 
 
I'm fairly certain this girl gets better lunches than me.
 
 
 
She was spying on the neighbors...girl after my own heart...I mean...did I say that out loud?
 
 

 
So I continued on with my wear everything in my closet quest. I forgot to take a selfie of my outfit on Sunday, but I did do some outfit posts, so that's why you see one in non selfie form. Oh and I worked from home a few days and that just makes me lazy...so you get bare feet pictures, because that's what I really wore.

Country Crock Review

In full disclosure I received a coupon for a free container of Country Crock, I was not compensated for this post; however, I am creating this post as part of a contest.  

Hello Foxy Friends! Guess what? I got my very first VoxBox! It was totally random, but I received some Country Crock for free! Can't pass that up.  I don't think I've had Country Crock in ages!



Hey remember when I told you I had food allergies? For those that don't know, I couldn't eat soy, corn, dairy, chicken, nuts or peanuts...I know chicken, it's a weird one. Anyways, I started doing allergy shots, I'm in month 10 of them. The Allergist had told me he thought that I wasn't truly allergic to those foods, rather I had so many environmental allergies that my body was perceiving those foods as allergen. So fast forward 10 months and just this past month I've been trying new foods! Can I tell you how good everything tastes! I have really been missing out! Anyway, enter getting this free container of Country Crock. It was meant to be! Country Crock has no dairy in it, so it was perfect for me to try it out my soy "allergy"...

Of course what did I do? I made some cookies...

I have been trying dairy here and there, and so far I get a lot of heartburn (TMI?), so I still used my special Vegan chocoloate chips. If you are in the market, these are delicious!


So onto the cookies. I used the chocolate chip recipe from the back of the Nestle Toll House Chocolate Chips.


Usually I use light brown sugar but we were out, who let that happen?

Next time I make these, I'm definitely going to buy the stick version of Country Crock so that I don't have to do this:

The mix did come out super watery. I'm wondering if I use the sticks if it would be less watery? But I continued on.


I figured I've already gotten this far, might as well keep going right? The cookies did come out flat, probably because they were pretty watery. So the first set in the oven I didn't use any cooking spray, and the cookies stuck to the tray a bit.


The next set I used my Silicone Baking Mat...which worked like a dream and the cookies just slide right off.


Even though they were flat, Baby Fox didn't have any problems choking it down.


So much so that he finished off the cookie before I even got a good picture.


So then I had to give him another one so I could get a picture...for you guys. I know he took one for the team and ate another cookie.


Verdict is:

Baby Fox -  said they were the best cookies ever! Imagine if I had used real chocolate chips instead of the vegan ones.

Me - I've been eating dairy free, soy free cookies for the last 8 years...these were fantastic. I did find a vegan type baking substitute that I use, that is good, but has no taste, so it sort of makes anything you're baking taste a little flat. Using the Country Crock gave it so much more flavor. Now that I can us Country Crock, game changer. It has so much more flavor and I'm looking forward to using it more and more!

Also I tried it on toast...of course I've found a toast substitute that is good, but the Country Crock is much better! Before I post the picture, I'm going to tell you that I like the ends of the loaf of bread...and I don't mind the little burnt pieces...While the picture doesn't look good, it tasted great! Nothing like eating the butt of a sour dough, yum! Anyone else? Am I the only one?


Have you tried Country Crock lately? If not you should! I know I'm going to be buying some more!
