Weekend Recap

Okay, let's try this again...

Thursday:

Our weekend started on Thursday, so that's where I'll start. Mr. had the day off, he had a music conference he was going to, and thought it was all day Thursday, but it turns out it was just check in after 5:30, but he had already taken the day off so he spent it with Baby Fox. When I get home, this is what I see from their day....

Swim stuff, clothes on the downstairs bathroom sink.

 And last but not least, Lion...looking like he went through war and back, and sopping wet, don't let that smile fool you, he was wet as wet could be. (so the story goes, Colton was excited for Dada to be home, and he was waving Lion around, wanting Mr. to play puppet with him, but Dada was eating a BBQ sandwich for lunch first and Baby Fox was waving the lion around, saying "Lion, Dada, Lion Dada" when all of a sudden, Lion went flying and landed right in the extra BBQ sauce that Mr had set aside)

Baby Fox went to grab some Persian food, Kabobs...yum!, and the lady working there thought Baby Fox was so cute that she gave him a cement truck...Baby Fox wouldn't let the thing go, and played with it all weekend.

He thought Mama's legs made for a good road.

And then we had to put the truck to sleep because Baby Fox wanted it in his bed with him

 (In case you wanted to know, Truck has already gone to Truck Heaven, Baby Fox, literally loved it to death)

Friday:

I put Baby Fox to bed with his sleep sack on...when I went to get him, he had figured out the zipper, zipped it down, and off...sneaky little guy!


He was really happy to see me, so much so that he was bouncing all around and took a header into the side of the crib...which resulted in...

 Don't worry he's since recovered and the big red bump he had on his forehead went away by family picture time on Sunday.

Saturday:

I taught Colton how to make eggs...

 (Mr. wanted me to tell you, that we don't normally dress our kid in mismatched clothes, he wanted to wear this short sleeved PJ set, but it was too cold, for Cali standards, for him to wear that to bed, so I threw on a long sleever shirt over it and some socks)

After breakfast Baby Fox inspected what was under the fridge...he was convinced something was under there.


Saturday night we went to visit my junior high school friends. I'm so happy that even though our lives are busy and we're starting to have kids, that we can still find time to get together and share all of these life milestones together.

 (The girl on the far left, I've been friends with/known her since Kindergarten, that's 28 years of friendship right there)

Baby Fox was great at showing the younger kids the "ropes"
(the kids are 4.5 months and 3.5 months, yep Baby Fox is just that small, the one on the right only has to gain 9 pounds before he's all caught up to Baby Fox)

Sunday:





(Left) Every morning Baby Fox gets 3 oz of prune juice, and lately he's been wanting it warm. I'll give you a second to let that sink in...warm prune juice, what is he 90?                                                                 
(Right) Baby Fox is showing Mama what he wants for breakfast, now that he's figured out how to open it. Don't judge what I have in the fridge, it's random I know. That pot up there is me being lazy, didn't want to put it in Tupperware, haha! 

We took some family pictures, which will be revealed at a later time and date. Plus we haven't gotten them back yet. I can say that the pictures are going to be awesome, just think, Baby Fox in a tux, cuteness overload! After the pictures Dada and Baby Fox spent some quality time watching football, Da Bears were playing, Mr.'s team. Gotta start them young!


One last thing, Baby Fox thinks he needs to keep his arm up when carrying something over his shoulder...

And that was my weekend. I'm in training all week for work, fun times. Wish me luck that I don't die of boredom, it happens you know.

Baby Fox the Model

Okay, so this was going to be tomorrow's post, but I just wrote out this long weekend recap, and then it got deleted. I'm really sad...so you get tomorrow's post today and I'll rewrite today's post tomorrow. Boo! Why didn't undo work this time?!?

Baby Fox is a model! I asked him to stand there and pose for me...it actually worked! I think he was getting ready for our family pictures the next day. He looks like a little boy in these pictures, what happened to my baby?!

BBQ Pulled Beef Sandwiches

This recipe is definitely a crowd pleaser. Every time I make it for a crowd they always love it. So sit down relax and get ready to make some homemade BBQ sauce and some pulled beef sandwiches

Ingredients:
  • 1 (5 pound) boneless beef chuck-eye roast, trimmed and cut into 4 pieces
  • 4 slices bacon, chopped fine
  • 1 onion, chopped fine
  • 2 tablespoons chili powder
  • 1 tablespoon paprika
  • 1 ½ cups brewed coffee
  • 1 ½ cups ketchup (I've ONLY used Trader Joe's Organic Ketchup, I've tried other Organic Ketchups, and they don't taste nearly as good, you've been warned)
  • ¼  cup packed dark brown sugar
  • 2 tablespoons brown mustard (I've used yellow mustard, works just the same)
  • 1 tablespoon hot sauce
  • 1 tablespoon cider vinegar
  • 1 teaspoon liquid smoke (I omit this...allergic, but I hear it gives it a great taste)
  • Salt and pepper
  • 10 sandwich rolls

Now onto the cooking part:

I didn't take pictures of the first parts, so let's just pretend that you know what I'm talking about.

1.  Place beef in slow-cooker insert.
 
 
2.  Cook bacon in large skillet over med-high heat until crisp, about 5 minutes. Using slotted spoon, transfer bacon to slow-cooker insert.
 
 
3. Pour off all but 2 tablespoons fat from pan and cook onion in remaining bacon fat until softened, about 5 minutes. Add chili powder and paprika and cook until fragrant, about 30 seconds. Stir in coffee, ketchup, sugar and 1 tablespoon mustard and simmer until reduced slightly, about 10 minutes.
 
 4. Add half of sauce to slow-cooker insert 
 
 
5.  Cover and cook on low until meat is tender, 9-10 hours (or cook on high for 5-6 hours).

 
   
6.  Refrigerate remaining half.
 
 
7.  After about 2 hours, this is what it will look like:
 
If after this amount of time, the meat is not fully submerged, shift the meat a bit so that everything is covered, or you can add a little more of the reserved sauce.
 
 
8.  Using slotted spoon, transfer meat to large bowl
 
 
 
cover with foil and set aside
 
 
 
9.  Transfer cooking liquid to large skillet,
 

skim fat, and simmer over med-high heat until reduce to about 1.5 cups, depending on how wide your pan is the time will vary, the pan below took about 15 minutes, if you use a sauce pan, with higher sides, can take up to 20-30 minutes.

Mid-cooking:
 
 
Looks roughly like this when you're done:
 
 
 
10.  Off heat, stir in reserved sauce, remaining mustard, hot sauce, vinegar, and liquid smoke.
 
 
 
 
11.  Pull meat into large chunks, discarding any excess fat or gristle.
 


Will end up looking like this:
 
 
 
12.  Toss meat with 1 ½ cups sauce 
 
 
 
 let sit, covered, until meat has absorbed most of sauce, about 10 minutes.
 

Season with salt and pepper (although I've never had to do this).
 
Toast some rolls (we could only find small ones, so we sort of made sliders)

    Then you know, add some green stuff, so you aren't a total carnivore.

It's raining!


Okay so I'm not really currently wearing this outfit, I wore this a couple of weeks ago. But I thought I would wear this if it was actually raining, so why not.

There's the blazer again. I swear, it's my new go to jacket, it dresses up any outfit and just makes it feel complete. Perhaps I should get it in some more colors...



My absolute favorite part of this outfit is the back of the shirt. Aren't those buttons just too cute? So glad that I don't have long hair (first time ever), so I can show off the cute back.


I just love this necklace...i'm constantly playing with the dangly pieces...I'm weird like that.


Let me tell you a story about these shoes. I looked for them for a YEAR! Yep you read that right, I saw them at Macy's once, and there was a tiny scuff on them, so I walked away, and from that moment on I searched high and low...and finally almost a year later I found them. They're Jessica Simpson, and I'm not ashamed to admit that! I should have taken a picture of the whole shoe...perhaps another post.


Going to the salon to get the works done...hopefully my hair will stop looking like I'm rockin' a would be mullet. Seriously people, I am not joking, if I don't straighten my hair with my straightener, looks like I walked out of Wayne's World...
